One ingredient five ways: Soy milk

Made by soaking dried soy beans and then grinding them with water, when it comes to taste soy milk is similar to cows’ milk and can be used in many recipes.

Soy Milk Pumpkin Pie
Take 1 1/2 cup soy milk, 500g of plain pumpkin peeled, deseeded and cut into chunks, 1/2 cup sugar, egg whites of 3 large eggs, 1 teaspoon ground cinnamon, 1/2 teaspoon each of ground ginger, ground nutmeg, ground cloves, and salt. Also take 1 low fat graham cracker pie crust. Boil the pumpkin chunks in water and drain. In a pan add spices (cinnamon, ginger, nutmeg, cloves, and salt) and add the boiled pumpkin. When the pumpkin begins to cook, add sugar. Blend well and add soy milk and cook for a while. Blend the egg whites and add to the pie filling. Pour filling into pie crust and bake at 200C for 35 minutes. Refrigerate.

Soy Cake
Sift 100g of flour and 2 tablespoons of almond powder. Separately combine 5 egg yolks and 2 tablespoons of sugar in a bowl and mix well. Add 2 tablespoons of oil and 3 tablespoon of soya milk and blend. Add the flour mixture to it and whisk. Pour the batter evenly into the cake pan and place it in a pre-heated oven at 165C and bake for about 35-40 minutes. When the cake is done, remove from oven and turn the pan over. Once cool slice it and serve.

Soy Smoothie
Take 1 ripe banana and thickly slice it. Also take 2 finely cut strawberries, 1 cup soy milk and 2 tablespoons of honey and blend them well until you get a smooth thick consistency. Serve it chilled.

Pasta with Soy Milk
Take 1 tablespoon olive oil and sauté one cup of chopped red, green, and yellow pepper till done. Add 1 teaspoon of chopped garlic. Separately melt 2 tablespoons of butter and add 2 teaspoons flour. Fry it for a while and add 1 cup of chicken broth to it. Also add 2 tablespoons of soy milk, 3 tablespoons of Parmesan cheese and the sautéed pepper. Cook for a while and once it gets a thick consistency add pasta noodles to it and mix well. Serve hot with sauces of your choice.

Soy Milk Chicken Curry
Take 2 tablespoons of olive oil. Take one kilo chicken and shred it into bite-sized pieces. Heat half the oil in a wok and fry the chicken. Add salt and freshly ground black pepper. Separately take 2 tablespoons soya milk and 25g sesame paste and fry for a while and keep aside. Heat the remaining oil and add readymade curry paste. Add the soya milk and sesame paste and bring to simmer. Add the chicken and heat through for three minutes. Serve with steamed rice. [email protected]
